Homemade Vanilla Extract

WOW!!! That is all I can say. It's been almost 2 months since my last blog post. What a summer. I've had my grandkids for the summer. Then we drove them from Maine to Tennessee to be reunited with their parents. Then we decided to take the long way home via the Upper Michigan Peninsula to look for rocks. It did not disappoint.


Well, let's get back on track shall we. This entry is about how I brewed my own vanilla extract. Homemade Vanilla Extract is known for its rich, complex flavor and incredibly smooth aroma. There simply is no substitute.

Many of you are familiar with clear or imitation vanilla extract. The difference between pure vanilla and imitation vanilla is simple; pure vanilla extract is made from whole vanilla beans extracted using alcohol - that's it! Don't be fooled by extracts that claim to be pure. Imitation and clear vanilla utilize artificial flavors. Pure vanilla extract should be dark brown; the color of Vanilla Beans used in the extraction process. NO THANK YOU! Never again.


Making your own vanilla extract requires ONLY 2 ingredients. It starts with good quality whole vanilla beans which I purchased at the Bulk Barn in Edmunston in Canada (which is a very cool store, check it out https://www.bulkbarn.ca/home-en/index_deals.html). You will need approximately 6 beans per bottle. The next thing you will need is some Vodka.


  • Slice each bean lengthwise and place in a bottle. (If it helps to cut them into smaller, tootsie roll-sized pieces so they fit in the bottle better, go for it).

  • Pour one cup of vodka into the bottle. Make sure the vanilla beans are completely covered with the liquid, so add more if need be. Attach the lid.

  • Shake once or twice a week.

  • Wait at least 8 weeks, but 4-6 months is ideal. The longer brewing time allows the flavor to fully develop.


Presto, your alcohol has turned into delicious homemade vanilla extract! Store at room temperature and out of direct sunlight, and you can enjoy this incredible tasting liquid until the very last drop!
